I'm off this weekend to spend some time with the Grandparents (Matthew's, that is) and so I will leave you with a quick recipe. In an attempt to eat healthier, I've been gathering recipes and trying new things every night. Most of the things we've tried have been ok, but not great. We had this one for dinner last night and it was so good I couldn't stop myself from having a second serving! It was really fast to make, and normally I'm not a tuna fan but I really did love this. Only change I made was to substitute french sandwich rolls for the whole wheat bread, mainly because that is just what I had on hand, but the roll was so perfect that I don't think I would use anything else now! Tuna Melt
4 servings | Active Time: 10 minutes | Total Time: 15 minutes
Ingredients
- 12 ounces canned chunk light tuna, drained
- 1 medium shallot, minced (2 tablespoons)
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon minced flat-leaf parsley
- 1/8 teaspoon salt
- Dash of hot sauce
- Freshly ground pepper, to taste
- 4 slices whole-wheat bread, toasted
- 2 tomatoes, sliced
- 1/2 cup shredded sharp Cheddar cheese
Preparation
- Preheat broiler.
- Combine tuna, shallot, mayonnaise, lemon juice, parsley, salt, hot sauce and pepper in a medium bowl. Spread 1/4 cup of the tuna mixture on each slice of toast; top with tomato slices and 2 tablespoons cheese. Place sandwiches on a baking sheet and broil until the cheese is bubbling and golden brown, 3 to 5 minutes.
Man! Tuna melts are a personal favorite!!! Except I use soy cheese of course;) Still very good! I'm not a huge tuna fan, but these tasty sandwiches really hit the spot! They also hear no gripes from the 6 year old:)
ReplyDeleteOk so we didn't get to cooking this weekend but hey shopping always comes in a good 2nd don't you think? Had so much fun and the time always go by so darn fast when you kids are down, wish you could stay a month. Your so creative, I just love hearing all your ideas.
