Mozzarella Stuffed Chicken

It's been a while since I've posted - I actually have a few things to post up, but I've lost the battery charger for my camera! First the camera, then the charger. I am having issues. I'm going to do some serious searching this weekend, but for now I will share a recipe that I came across recently. Actually, thats not true... I came across this recipe about 5 years ago and when I made it it was...unimpressive. Well last night I needed something fairly quick and decided to give it another try. The only problem was that I didn't have all of the right ingredients! I figured I would use what I had and that would be good enough. OH. MY. GOSH. This is possibly the best tasting chicken I have ever made. So here is my own modified recipe - I hope you enjoy!

Mozzarella Stuffed Chicken

4 Servings | Prep Time: 15 min | Total Time: 30 min

Ingredients
- 4 boneless, skinless chicken breasts
- salt, to taste
- black pepper, to taste
- 4 slices part-skim mozzarella chese (I was out and actually used string cheese... still good!)
- 1/2 cup dry seasoned bread crumbs
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons reduced-fat mayonnaise


Directions
1. Heat broiler. Brush broiler-pan rack with olive oil, place 8 inches from heat.
2. Place chicken breast halves between sheets of plastic wrap. Lightly pound. Season chicken with salk and pepper. Slice each breast horizontally almost in half, but leaving one side attached. Place a mozarella slice on bottom half of each breast, keeping in center. Fold top of chicken over filling, pressing around edges to seal.
3. Combine bread crumbs and Parmesan on a sheet of waxed paper. Brush chicken with mayonnaise. Dip chicken into crumbs; press to adhere.
4. Lightly coat both sides of chicken with nonstick cooking spray. Place chicken on prepared broiler-pan rack. Broil 8-10 minutes, turning once, or until fully cooked.

Give this a try, it is rediculously good! As a quick side I boiled up a little penne and put just a tiny bit of red sauce on it. Perfect meal!
